yes, I hate to cook……I can hear your wheels turning, “but you are a Nutritionist?”

I get it…..it may seem contraindicating to be a holistic nutritionist and not enjoy cooking. But in my life, food was never about nutrients, macros, antioxidants and fuel. I did not grow up thinking this way. Then, add on a career in Photojournalism for 20 plus years, averaging 10 cups of coffee a day, adrenaline based assignments and deadlines…….there was no time for food and cooking!!! But I can take pretty pictures of food!

I only started thinking about food as fuel and products as potential toxin contributors when I started being a rep for the incredible brand called Arbonne. When I hit my midlife question at age 40….is this the next 40? Can I really keep doing this for another 40 years? I started to become very interested in using food as fuel for health and immunity, and teaching my teenage girls the power of choosing products properly.  At that time with sore body, camera gear costing thousands and never seeing my family….my inside voice said NO. So yes, Holistic Nutrition is my second career.

Moroccan Spiced Pumpkin Soup

Soooo now that I told you this secret “I am the Holistic Nutritionist who hates to cook” I am gonna share a recipe. HA!

This soup is easy enough for me to create and during this amazing fall time in Canada, PUMPKINS are in abundance! Making a soup with ingredients straight from the farmer’s market is a HUGE win in my book. I may not cook the best, but I can tell you all the health reasons and arguments WHY you need to shop local and cook from locally grown produce.

This recipe is part of my Metabolic Balance Coaching program. A program that focuses on balancing my client’s systems based on, blood values, personal measurements and personal details captured during our intake interview. This program based in Germany and is one of the leading weight loss programs supporting clients dealing with PCOS, Diabetes, Inflammation, and many more ailments.

Moroccan Spiced Pumpkin Soup

Part of the Metabolic Balance Coaching I do with clients, this recipe is a great option and the pumpkin does not require roasting prior.

  • 1/2 large Jap Pumpkin
  • 2 cloves garlic (please buy Cdn/local grown)
  • 1 tsp Ginger
  • 2 cans chickpea (washed and Drained)
  • 2 tsp Ground Corriander
  • 2 tsp Cumin
  • 1 tsp cinnamon
  • 1 lemon (juice only)
  • 1 litre Bone Broth

salt and pepper to taste

Olive Oil low heat

  1. Chop pumpkin into chunks, remove seeds, pulp and skin. Chop garlic, ginger and measure out spices. Add pumpkin and spices tobowl and keep on side. Fry your garlic and ginger over medium heat for 1 minute. 

  2. Add pumpkin and spices, toss to coat the pumpkin. Add your bone broth and bring to boil, At this stage add your drained chickpea’s

  3. cook for 25 minutes until chickpeas and pumpkin are soft

  4. spoon mixture into food processor and blend until smooth. 

  5. add the mixture back to pot on stove and add lemon juice, season with salt and pepper to your taste. Enjoy!!!
